Objects of research, development or design: biologically active component; lactic acid bacteria; lactobacillus strains; prebiotics; starter culture; milk processing product; fermented milk product; probiotic properties; functional purpose; quality and safety indicators.
The purpose of the project / program: This project is dedicated to the development of the composition and technology for the production of a complex biologically active component with symbiotic properties based on probiotic strains of Lactobacillus Lactobacillus isolated from national camel milk processing products and prebiotics, as well as the development of a functional dairy product (with a lactic acid bacteria content of 106-108 CFU/g) using a complex biologically active component.
1. To study the quality and safety indicators of raw milk and processed products obtained from various camel breeds in the West Kazakhstan region of the Republic of Kazakhstan
2. Isolate pure cultures of lactic acid bacteria from camel milk processing products (shubata, kurta);
3. To scientifically substantiate the selection of Lactobacillus lactobacillus strains based on spontaneous fermentation products of camel milk with the most pronounced probiotic properties;
1. The quality and safety indicators of raw milk were studied in order to isolate lactic acid bacteria.
2. DNA was isolated from 7 strains of lactobacilli (Sh-08 L, Sh-02 L, Sh-07, Sh10 L, Sh-14 L, Sh-21 L, Sh-28L).
3. 18 isolates of lactic acid bacteria were isolated. Isolates have been studied for probiotic properties such as acid formation activity, antagonistic, adhesive properties, as well as resistance to aggressive media.
4. Published:
1 report on the topic: “Unique microflora of camel milk and ways of its utilization in biotechnology” at the International Congress of PHYTOPHARM 2024 (November 07-09, 2024, St. Petersburg),
1 article in domestic publications recommended by the SHEQAС;
The study of the epizootic situation and the spread of infectious and parasitic diseases of bees in the bee farms of the West Kazakhstan region, the patterns of spread and factors affecting the manifestation of particularly dangerous diseases, which will allow predicting the level of tension in the veterinary and sanitary situation, planning and developing therapeutic and preventive measures for the sustainable development of beekeeping.
Development of scientifically based technologies for keeping bees, which will increase the economic, technological, and social efficiency of the industry, increase the volume of production of bee products and expand opportunities for international cooperation in promoting bee products to the foreign market and the development of the beekeeping market as a whole.
they represent a set of products that will be in demand among existing dairy industry enterprises in terms of meeting the need for domestic starter cultures with probiotic properties that can rationally integrate into the technological chain of production of fermented milk products and guarantee safe and high-quality products based entirely on raw materials of the Republic of Kazakhstan. There are all prerequisites for scaling the project in the context of stable development of camel breeding in the Republic of Kazakhstan in the context of a warming climate and prospects for the development of the domestic competitive food industry. The introduction of domestic developments in biotechnological and food production in the Republic of Kazakhstan will create new jobs at the enterprises of the industry. The expected results of this project are of high public importance, obvious to consumers of food products, as they will expand the range of fermented dairy products based on camel milk. The groundwork obtained within the framework of this project will become the basis for future research in the interdisciplinary field, and in the future in the pharmaceutical industry in the development of biologically active additives based on camel milk with proven properties.
Degree of implementation: They represent a complex of products that will be in demand among existing dairy industry enterprises in terms of meeting the need for domestic starter cultures with probiotic properties that can rationally integrate into the technological chain of production of fermented milk products and guarantee safe and high-quality products based entirely on the country’s raw materials.
